Why Tallow. Why Now.

Butter got pushed out of kitchens by margarine in the 1970s — a processed, artificial replacement that somehow became the default. Margarine lost ground, but it left a gap. Seed oils filled it. Soy, canola, sunflower — industrially processed, chemically unstable, optimized for shelf life, not for cooking.

Beef tallow is different. It's been a cooking fat for thousands of years. Indigenous peoples of the Great Plains rendered every bit of fat from the bison they hunted — nothing wasted, nothing artificial. Early American settlers did the same with cattle. Tallow was the primary cooking fat in this country until the industrial seed oil revolution.

We didn't invent tallow. We just put it in a stick.
